UNLIMITED WEAPONS AND FULL AMMO:
Go to the inventory screen and press:

L1, TRIANGLE, R2, L2, L2, R2, CIRCLE, L1

You'll hear Lara sigh if you did it right.

LEVEL SKIP:

Hit select, the press L2, R2, L1, O, Triangle, L1, R2, L2 
while in the inventory screen.
